MAMA LOLITA'S MENUDO RECIPE FOR PARA TODOS PRODUCTS
4 lbs Beef Tripe
2 lbs Pork or Beef Feet
3 Qts Water
2 Teaspoons Garlic Powder or 2 Whole Garlic Cloves
2 Tablespoons Cooking Oil
1 Tablespoon Flour
1 (3-1/4 Oz.) Jar Menudo Spice Mix
1 to 3 (15-1/4 Oz) Cans White Hominy
1 Tablespoon Crushed Oregano
Remove excess fat from Beef Tripe. Rinse Tripe and place in Dutch Oven. Add Pork or Beef Feet, water, and garlic power or 2 whole garlic cloves. Simmer covered for 4 hours or until tender. In a bowl combine 2 cups of the soup and Menudo Mix. Heat cooking oil in a skillet. Brown the flour a little. Add spice mixture and simmer 3 minutes, stirring constantly. Stir spice mixture and drained hominy into soup. Simmer 20 minutes longer. Add oregano. Turn off and cover for 10 minutes. Makes 10 to 12 servings.
